An intense ruby red color with orange brick reflections that become apparent after a few years of aging. In the nose clear red fruit, strawberries, cherries and black forest fruits. A little white pepper on the nose is evident, which is typical of this particular area of Novello. Warm vanilla sensations on the palate, red fruit, dry and soft with enveloping sweet tannins. Slightly spicy notes mix with the red fruit and make this wine uniquely elegant.

PRODUCTION ZONE

These two Nebbiolo vines come from the vineyards in Novello and are located between 350 -400 meters above sea level. The soil is marl and clay with good permeability and an excellent south-facing position. The two Crus Ravera and Cerviano Merli form an excellent Barolo with the typical characteristics of these vineyards.

TRIM SYSTEM AND VINEYARDS

The vineyard is exclusively composed of Nebbiolo , with Italian clone material (10 % Michet, 80 % Lampia, 10 % Rose). The trimming system is Guyot with 4,700 vines per hectare. The vineyard is certified organic and the yield is 70hl per hectare.

VINIFICATION

Traditional vinification for 20 days at a controlled temperature of 30/35°C with several times during the day to optimize color extraction. After a rest of 4 months in stainless steel, the wine matures for 2 years in French oak barrels, and then it is Bottle in our underground cellar at a constant temperature of 16 ° C until it is sold.

FOOD PAIRING

Excellent with red meat, game, roasted meats and stews. An excellent meditation wine. Once matured, this wine pairs remarkably well with dark chocolate and chocolate puddings.
