Spain cava Cava is a sparkling wine, which is mainly produced in the Penedes southwest of Barcelona in the Catalunya wine region, cava is made from different grape varieties, but traditionally it is made from Macabeo, Xarel-lo and Parellada. Cava is made in the same way as Champagne, but it cannot be called Champagne. Champagne is a protected name for sparkling wines that only come from the Champagne area .
