Laroche Chablis
Tasting note:
Laroche Chablis is a rich, full wine with a good balance of minerals. Vinification takes place 1/3 in stainless steel tanks and 2/3 in oak barrels. The color of the wine changes from light yellow to golden yellow as it ages. Good accompaniment to oysters, sea fish, crustaceans and shellfish without too strong sauces.
Domaine Laroche " strives for a global approach to responsibility and sustainability that is translated into agroecological viticulture.
How to define? It is simply a method that takes into account the relationship between the plant, its physiology, its soil, its climate and the environment. It quickly becomes clear that the balance of the plant contributes significantly to the reduction of treatments, because it is naturally more resistant against diseases and pests.
We have our own specifications, based on a few simple principles: no herbicides, no insecticides or anti-rot. The treatments used should help the plant and not disrupt the balance or ripening of the grapes. For example, we experiment with natural nettle and valerian treatments that are very effective.
Thinking only ecologically in the vineyard would be nonsense. In the wine company we apply the same principles as in the vineyard: inputs are kept to a minimum and we work to reduce energy consumption and the use of rainwater.
A global approach to taking the environment into account in our activity requires skills, and therefore people. We cannot say enough how important they are, in the transfer, but also in creating new experiences. We encourage learning because it makes for effective witnessing, especially when it comes to manual skills.
